Video:
VHS rip for episodes 1-24. I think parts of the screen were cut off, because when the English episode title shows, the right side has parts missing. But it never really detracts from the actual action.
As for the image quality, it's pretty decent. It won't make you cringe, it won't blow you away.
Episodes 25 and 26 were ripped from the R1 DVD. the quality is better for those 2 eps, and nothing is cut off. However, the opening of one of the earlier episodes (Ep 20 I think) was screwed up completely. Screwed up as if the disc had been dragged through the streets by a wild bull. (No my disc wasn't scratched, others have had the same problem.) The movies are Widescreen-ish, and they have better quality than eps 1-24 and well.

Comment:
Don't even THINK about buying this set if you're a first time viewer. You'll end up being charmed by the first 20 eps, only to be frustrated to the point of insanity by the poor quality of the subs on the rest of the eps and the movies. (25 and 26 excluded).
Said subtitles aren't as bad as other HK originals, such as the MI release of AKIRA. Still it won't help you understand Eva, which isn't the simplest anime to begin with.
If you just want to relive Eva, and you don't own the R1's, go ahead and buy this.
But if you haven't seen Eva or the movies, don't waste your time and money.
