This is the essential list. Disregard those other lists. Start with Cowboy Bebop. Make that the first thing you buy. Then go buy Castle of Cogliostro. Then go get Vampire Hunter D: Bloodlust. Now we've got you hooked. Then go get some Ranma, Maison Ikkoku, GTO, Rurouni Kenshin, and Tenchi Universe. By then, you should be able to figure things out for yourself.

Berserk, Ranma, One Piece, Dragonball, Lupin the Third, Trigun, and so many others. This is just a good starting place for a new fan.

Cowboy Bebop, then Hellsing. After finishing those two, get Record of Lodoss War TV (I definately think you would like this swords and sorcery epic, Dan.), NOW we have you hooked  Then try Kenshin and Ramna 1/2, when you get more interested get Chobits. Then start trying to get used to subs to broaden your selections then get One Piece. Then go from there. I would try to get a mecha series like Evangelion, or Robotech.
Then get a romance like Fushigi Yugi or Maison Ikkoku. Now you have a nice rounded out collection to start out with.

Hmm, well, this might be a repeat of the above, but here are some very big, very famous titles with universal appeal.

Cowboy Bebop
Trigun
Neon Genesis Evangelion
Vision of Escaflowne

I'd start with those. Very solid and anyone can get into them (although to truly appreciate Bebop's excellence at every level you should have some film history and some working compositional knowledge, and Evangelion has been known to be a bit too philosophical and self-reflexive for some.)

You will dig all of them though.

I think everyone unanimously agrees on Cowboy Bebop. A good place to start.

Yeah, everyone agrees with Bebop, a great series to start with and that has wide appeal

Berserk and Hellsing are great action series.

Macross Plus is a great OVA and one of the Macross universe has to offer

For romance check out Love Hina, its good mindless fun, its not very original but since you're new to anime it'll be original to you

And check out the Ghibli movies, the Ghibli collection is one of the best sets HK DVDs have to offer

Yes indeed Clamp has to have some of the most elegantly drawn characters, intricate plots, and great musical scores. (And Su also likes to push X. )
