I love so many anime openings and endings.. my list is long... I'm sorry 
But I already reduced it to the least XD
Scarlet - OP of Ayashi no Ceres... just *awww* ;D
Secret - ED of Fruits Basket... dont like the anime so much, but the endingtune is nice
2. Opening Theme of HAMTARO (yes, you read right *blush*) but only the japanese one!!! Its just a good-mood song of the cute kind
Aim 4 - german OP of Hellsing... it rocks and totally different from the japanese one
Yume no Naka e - ED of Kare Kano... top lyric
Sobakasu - 1. OP of Kenshin... even like the engl. version of it (sept the lyric -.-")
One Half - 2. OP of Kenshin... kawaii lyric ;D
Its Gonna Rain - some ED of Kenshin (2nd? 3rd?), nice pop song
Over the Sky - ED of Last Exile... lovely Refrain ;_; and fits to the last ep... somehow *sigh*
Rocks - 1. OP of Naruto... couldnt get enough of it It simply rocks *g*
Haruka Katana - 2. OP of Naruto... great, esp the animations to it... excellent
Ningyo Hime - 2. ED of Chobits... Lyric fits to Chii and its just cutey and lovely =)
Just Communication - 1. OP of Gundam Wing
Grace - ED of Jin-Roh... ever heard something sadder? ;_; That song/sound is just a shock after the movie, heh
Zankoku na Tenshi no TE-ZE - OP of NGE ^^ could listen to it every time
Kindan no Panseé - OP of Silent Möbius, like it as much as the OP of NGE, its even good in engl. (The Forbidden Pensee)
Kaze Wa Mirai Ni Fuku - ED of Trigun... *sigh* Trigun... watched it 5x and still love it...
Mother Earth - german OP X... anime bored me, but music was good
Give a Reason - OP of Slayers-something (NEXT maybe)
think some Digimon songs (esp. of Wada Kouji) aswell and the Mononoke theme and thats it I think
