Fushigi Yuugi
Escaflowne
and Lodoss Wars

X TV is not fantasy.

X sure looks like fantasy to me. Modern day, but it's still fantasy.
Dragon Ball is fantasy! Vamp Hunter D could be classified as it too!

I heard 12 Kingdoms is an excellent anime! ^^

Another one to try, if you enjoyed Fushigi Yuugi, you may want to look into Ayashi no Ceres, which is set in a more serious tone, and less fantasy, but some aspects are still there ^^;

PS .. Studio Ghibli is good too ^^;; .. almost forgot one of the gurus in fantasy anime @_@
